Monkfish with parma ham and vine tomatoes

Keeping with last week’s theme of healthy food, here’s a fish recipe.

Recipe time 10-20 minutes

Serves two
2 pieces of monkfish
2 slices of parma ham
6 basil leaves
2 teaspoons of olive oil
1 teaspoon of lemon juice
12 vine tomatoes
half a teaspoon of honey

Gently rub each fish with a little olive oil, salt and pepper. Tear a couple of the basil leaves and stick them to each fish.
Wrap a slice of parma ham tightly around each fish.
Rub the tomatoes with the remaining olive oil, the honey and some black pepper.
Place the tomatoes and fish on a baking tray and place in the oven at 190 degrees for 15 minutes. (If it’s a big piece of fish it will need a few minutes longer.)
Drizzle the fish with the lemon juice before serving and garnish with the remaining basil.
